I try to cook as many as three meals at the same time. So I buy chicken and a stir-fry sauce, and fry it up with some crunchy vegetables (like carrots and broccoli). I split the cooked chicken into two or three.
Then I cook rice the one night and noodles the next and serve it up in a slightly different way (add a sweet and sour sauce, add some corn, add peppers etc). Simple, but a nice quick way to do it.

Wow. This seems a clever way to manage meals without eadtume time, energy, money and resources. I keep cut vegetables frozen. So that when to make soups, or gravies or omelette my time is saved..
