Really Simple Strawberry Cornbread Muffins

This recipe came about by my kitchens lack off eggs and my craving for cornbread anything!
Cornbread is really usually more of a southern choice to go along with dinner, however I prefer sweet cornbread muffins. The sweet muffin version of this recipe is great for breakfast, lunch or dinner. As a mom it is so valuable to have a REALLY easy recipe that I know will go with most meals, or work great just as a snack! My daughter really loved these, so that always guarantees I’ll make it again.

This recipe is literally 2 steps, and uses only 2 ingredients. You’ll see one of those ingredients in strawberry applesauce. Using the applesauce replaces the the egg in the recipe. The reason I use it is because my daughter always asks me to buy her the little flavored applesauce cups. Then once we get it home, she never eats them. So I always try to find recipes, or put it together myself using things in my cupboards that would otherwise not get eaten. 

Using up EVERYTHING in your cupboards by seeking out simple recipes for ingredients you already have an be a big money saver. Wasted food can become a big problem that we don’t really notice. It’s good to pay attention and try to reduce your family's food waste. 

Recipe:
 
1  Box Jiffy Cornbread Muffin Mix
1  4 oz Container of Strawberry Applesauce

Prepare muffin tins by greasing them or placing muffin liners in each cup.
Mix and pour into muffin tins.
Bake per directions on the Jiffy Muffin Mix box.
Cool and enjoy!
