I'm a self-taught cook, and tend to be better with main dishes. You know, supper. I really enjoy making desserts though. My lack of practice with them can sometimes make for a wasted mess, so I don't have many dessert recipes. Today I found the best recipe for a simple type of sweet treat, and generally likable by everyone.
I think the reason it came out so well is because of the simplicity of the recipe and the few ingredients. Even though once cooked this coffee cake comes out looking soft, and perfectly crumblier top with the sweet peaches adding a refreshing spot in the cake. I loved it the first time I made, and I'm usually not that lucky for a recipe to come out that well the first time!
Peachy Coffee Cake
3 Cups flour
3 Cups sugar
3 Tsp. baking powder
1 1/2 Tsp. salt
3 Eggs, beaten
1/2 Cup milk
1 lb. or 18 o.z. canned sliced peaches, drained. Obviously if you can get fresh peaches this recipes is even better.
The Crumble: The crumble originally calls for a good mix of cinnamon and sugar, and 1/2 lb. of margarine. Well this recipe already has quite a bit of sugar. So in an effort to make it healthier I replaced the margarine with coconut oil. I think the coconut flavoring with the peaches has made this coffee cake that much better!
Sift dry ingredients , add eggs and mix to a crumble. Add milk and mix. Spread one-third of the crumble mixture in 9 x 13-inch pan. Arrange half of the peaches over the crumble layer. Repeat layers, ending with crumble mixture. Top with cinnamon sugar mixture.
Bake at 350 degrees for 1 hour or until toothpick comes out clean.
Yields: 12 servings
